Stranger Things Upside Down Cookies (Half & Half Edition)
If a chocolate-chunk cookie had an Upside Down version, it would look exactly like this.
Ever wondered how your favorite chocolate-chunk cookie would look in the Upside Down? This is literally it. Half classic brown-butter cookie, half red with white chocolate chunks. Easy to make and perfect to eat while watching the new season.
Ingredients
Base Cookie Dough
¾ cup unsalted butter, browned and slightly cooled
½ cup light brown sugar, packed
½ cup molasses sugar, packed
¼ cup granulated sugar
1 large egg + 2 egg yolks, room temp
1 tbsp vanilla extract
1¾ cups all-purpose flour
¾ tsp baking soda
¾ tsp kosher salt
1 cup milk chocolate chunks
½ cup dark chocolate chunks
Flaky salt for topping
For the Red Upside Down Half
Red food coloring
½ cup white chocolate chunks
How To Make the Upside Down Cookies
1. Make the dough
Mix the browned butter with the sugars.
Add the egg, the yolks, and the vanilla.
Fold in the flour, baking soda, and salt.
Add the milk chocolate and dark chocolate chunks.
2. Split the dough
Divide the finished dough into two equal halves.
Half A: Leave as is
Half B: Upside Down version
3. Tint the Upside Down half
Mix red food coloring into one half of the dough until deep red.
Fold in ½ cup white chocolate chunks.
Leave the other half plain.
4. Form the cookies
Take one ball of plain dough and one ball of red dough.
Press them together so they stick and make one clean half-and-half cookie.
Don’t mix — keep the split clear.
5. Freeze
Freeze the dough balls for 30 minutes so the colors stay clean and the cookies bake thick.
6. Bake
350°F / 175°C
10–12 minutes
Edges set, centers soft.
Add the flaky salt after baking.
7. Cool
Let them sit on the tray for a few minutes, then drizzle some Hershey’s chocolate syrup on the red half if you want that extra dark Upside Down look.
