If Dustin from Stranger Things Was a Cookie… He’d Be This Brown-Butter S’mores Cookie Filled With Marshmallow + Graham + Nutella
Dustin has this cozy-brave vibe I love. He’s funny, sweet, and the kind of friend who’d drag you into the woods for a bonfire, tell the best stories, roast marshmallows, and somehow make you feel totally safe even though you’re literally in the middle of nowhere. That’s Dustin. Warm, loyal, a little wild, but always with a good heart.
So his cookie had to feel like that: comforting, fun, and brave enough to go full s’mores + Nutella without apologizing.
Brown-butter chocolate chip on the outside, and inside? Marshmallow spread, crushed graham cookies, and a little Nutella because it just feels right.
A cozy bonfire cookie. Dustin energy all the way.
Ingredients
Dough (my chocolate-chip base)
¾ cup unsalted butter, browned and slightly cooled
½ cup light brown sugar, packed
½ cup molasses sugar, packed
¼ cup granulated sugar
1 large egg + 2 egg yolks, room temperature
1 tbsp vanilla extract
1¾ cups all-purpose flour
¾ tsp baking soda
¾ tsp kosher salt
1 cup milk chocolate, chopped
½ cup dark chocolate (70–80%), chopped
If you don’t have molasses sugar:
Use all light brown sugar
Add ½ tablespoon molasses
And if you don’t even have molasses, just stick to the light brown sugar. It still works, just not as deep and caramelly.
Filling
1 cup crushed graham cookies
1 cup marshmallow spread
Nutella – about 1 tablespoon per cookie
For example, if you make 10 cookies, you’ll need 10 tablespoons of Nutella.
1. Make the brown butter
Cook it until golden and nutty. Let it cool a bit so it’s still melted but not hot.
2. Mix the sugars + butter
Whisk brown butter with light brown sugar, molasses sugar, and granulated sugar.
3. Add eggs + vanilla
1 whole egg + 2 yolks. Mix just until smooth. Add vanilla.
4. Add the dry
Flour, baking soda, salt. Fold it in gently.
5. Add the chocolate
Milk + dark chocolate chunks. The more chaotic they’re chopped, the better.
6. Chill the dough
At least 45 minutes. It makes the cookies thick and chewy.
7. Prep the fillings
S’mores mix:
Mix the crushed grahams with the marshmallow spread until you get a soft, sticky s’mores filling. Set it aside.Nutella coins:
Line a small tray with oven paper.
Drop 1 tablespoon of Nutella for each cookie onto the paper (one little pile per cookie).
Freeze until firm – these are your Nutella “coins”.
8. Assemble
For each cookie:
Scoop a spoonful of cookie dough and flatten it in your hand.
Add a spoon of the marshmallow + graham mix in the center.
Place one frozen Nutella coin on top of that filling.
Fold the cookie dough around everything and seal it well, forming a ball.

9. Bake
350°F / 175°C
10–12 minutes
Edges set, centers soft. Don’t overbake or the marshmallow disappears too much.
10. Cool
Let them sit on the tray for 10 minutes so the center stays gooey.
