Brookie cookie ice-cream sandwiches made for Christmas movie night: Home Alone edition
Brookie cookies filled with Nutella ice cream and finished with Christmas sprinkles. This is the cookie I believe fits Home Alone perfectly: simple, fun, chocolatey.
When I think of Home Alone, I think of something fun, cold, chocolatey, and easy to throw together. Basically the kind of thing Kevin would eat the second he realizes no adults are watching him.
The brownie + cookie mix feels exactly like that. Nutella ice cream fits the movie vibe because it’s simple, sweet, and you don’t need to overthink it. And the Christmas sprinkles… well, the whole movie looks like Christmas exploded, so it makes sense.
This is the kind of treat I’d make every time I watch Home Alone. It just matches the movie in the most obvious, comfortable way.
Ingredients
Brownie layer
¼ cup unsalted butter, browned and cooled
½ cup white sugar
1 egg
¼ cup cocoa powder
½ tsp vanilla extract
¼ cup all-purpose flour
¼ tsp salt

½ cup unsalted butter, softened
½ cup white sugar
1 egg yolk
1 tsp vanilla extract
1 cup all-purpose flour
½ tsp baking soda
¼ tsp salt
½ cup chocolate chips
Filling
Vanilla ice cream
Nutella
Pinch of salt

Extra Nutella
Christmas sprinkles
How to make my Home Alone cookies:
1. Make the brownie layer
Brown the butter and let it cool.
Mix it with the sugar until smooth.
Add the egg and vanilla.
Add cocoa powder, flour, and salt.
Stir until thick and glossy.
2. Make the cookie layer
Cream the softened butter and sugar.
Add the egg yolk and vanilla.
Mix in flour, baking soda, salt, and chocolate chips.
The dough will look sandy at first. Trust it. Press it together and it becomes a proper dough.
3. Mix the cookie doughs
Drop spoonfuls of each dough into one bowl.
Swirl gently until marbled.
Stop before it blends too much. You want contrast.
4. Bake
Scoop onto a lined tray.
Bake at 175°C for 10 to 12 minutes.
The top should look set and lightly golden.
5. Rest
Leave the cookies on the tray for 10 minutes.
The brownie side finishes setting during this time.
6. Make the Nutella ice cream
Scoop vanilla ice cream into a bowl.
Add Nutella and a pinch of salt.
Fold only a few times so you get ribbons of Nutella instead of a muddy mix.
Freeze for 10 minutes so it firms up again.
7. Build the sandwiches
Pair the cookies by size.
Place one cookie upside down.
Add a thick scoop of Nutella ice cream.
Top with the second cookie and press gently.
Freeze the sandwiches for 30 to 45 minutes so they stay solid.
Once chilled, warm a little Nutella until spreadable.
Cover half of the top cookie and add Christmas sprinkles.
Let it set in the freezer for 5 minutes.

Troubleshooting
The cookies cracked when I pressed the sandwich.
Freeze the cookies for 10 minutes before filling. It keeps them sturdy.
My ice cream melted too fast.
Your kitchen is warm. Keep the ice cream bowl in the freezer between sandwiches.
The cookie spread too much.
Chill the marbled dough for 20 minutes before baking.
The brownie side feels underbaked.
Normal. Let the cookies cool longer. Brownie firms up as it rests.
Nutella on top looks streaky.
Warm it a little more. If it’s too cold, it drags instead of coating.
